Winemaking Note	Harvested and sorted in the cool of night. Gentle pressed, cold settled free run juice, expressive yeast strain, cool fermentation. Rested on yeast lees for three weeks before early bottling to retain perfumed aromatics and vibrant fruit characters. Firm acid structure and tight fruit characters provides maturation potential for those whom enjoy the secondary characters of mature Riesling.
