| The Riesling grapes peak early with flavour development while the acidity levels are naturally high, and produce a crisp refreshing style. Harvested when temperatures are at the lowest during the night the grapes are de-stemmed and sorted in the vineyard to preserve the purity of fruit in the juice. The cool grapes are immediately transported the winery where they are crushed, pressed and cold settled for 48 hours. Once the clarified juice has been separated from the juice solids it is inoculated with a neutral yeast strain and fermented for 18 days at cool temperatures in a stainless steel tank. When alcoholic fermentation is complete, the wine was clarified and prepared for early bottling, capturing the youthful characteristics of our Riesling grapes. |
